ÉCRU describes itself as a natural and raw food bistro, a place where color, nature, energy, simplicity, and beauty converge. In the heart of Rome, it operates as a raw food restaurant, cafeteria, and pastry shop all in one. The kitchen is a raw lab where only vegetable, organic, and biodynamic raw materials are used, and nothing is heated above 40 degrees Celsius. This commitment to preserving the nutritional and organoleptic properties of ingredients has earned ÉCRU a Michelin Recommended distinction for 2026.
The menu is flexible, changing with the seasons and the team’s creativity. Expect salads, tartare, carpaccio, raw vegetables, legume hummus, soups, and sandwiches – all gluten-free and prepared fresh daily. For breakfast or a snack, there are cakes, tarts, mousses, puddings, brownies, and chocolates, alongside specialty coffee, cappuccino with vegetable milk, and yogurt.
