Giulietta Vino e Cucina sits on Via Giulia, one of Rome’s most historic streets, just steps from Campo de’ Fiori and Piazza Farnese. Behind the stoves is Alessandro Pistoia, a chef who describes his approach as “the last evolution of an Italian hospitality concept born long ago, rich in tradition and innovation, tenacious passion and hard work.” His philosophy is simple: “Pure love for a simple, rich cuisine of absolute quality.” Accuracy and passion are his main ingredients. The menu is rooted in Roman tradition, with dishes like carbonara, amatriciana, cacio e pepe, and gricia – all made with artisanal pasta. Pistoia’s videos show the care behind each plate: a carbonara with truffle, a burrata with Cantabrian anchovies, a parmigiana of eggplant. The kitchen also ventures into lighter territory with baccalà al vapore and lime mayonnaise, or a foie gras scaloppa with beetroot gelato.
The quality extends to the wine list, which features organic bottles from Italy and France, plus Prosecco and Champagne.
Giulietta’s commitment to excellence has earned it a Michelin Recommended distinction in 2026 – a recognition that aligns naturally with the restaurant’s own standards. “It’s not perfection. It’s something you feel,” says the team.
