Founded in 1993 by Chef Giancarlo Morelli, Pomiroeu has spent over three decades dedicated to research, culture, and hospitality. The Philosophy

Morelli’s cuisine is anchored in the essence of the raw ingredient. As he puts it, the kitchen “combines colors, techniques, and flavors, finding balance between these elements while respecting the nature of the primary ingredient.” This approach is not about spectacle but about clarity: letting produce speak, whether it is a simple vegetable or a complex cut of meat. The Chef

Giancarlo Morelli is a Bergamo-born chef whose dream began in childhood, imitating his mother Rosa’s gestures in the kitchen. His career has been one of steady evolution – from local roots to a national profile, with collaborations that include figures like Carlo Cracco and Davide Marzullo. At Pomiroeu, he translates his experience into menus that evolve with the seasons, always tethered to the rhythms of Brianza.

The Experience

Pomiroeu offers a la carte and tasting menus, the latter a surprise journey through Morelli’s interpretations. Guests can also book the “Carta Bianca” for a fully personalized path. The wine list is carefully curated, with pairing options available. On the sweet side, Morelli’s signature “lievitato” – a naturally leavened cake made with renetta apples, candied ginger, chocolate, and bergamot – reflects the restaurant’s apple-rooted name.
