The story
In the heart of South Tyrol, Villandro is home to Ansitz Steinbock, a castle-like estate where history and contemporary design meet. The property, once a courthouse and later an inn, now offers just twelve suites, each one an exclusive space within ancient walls. The guiding philosophy here is one of genuine warmth: "great simplicity and the good life," where guests are treated as friends.
Since October 2024, the kitchen has been in the hands of René Tschager, a young South Tyrolean chef whose style is described as relaxed and carefree, yet deeply respectful of ingredients and high-level culinary art. His approach defines the three distinct dining concepts at the property.
For those seeking the pinnacle of the experience, La Lumosa offers fine dining described as minimalist but in love with detail. Here, Tschager's creativity and precision take center stage. A more casual option is Stain à la carte, which presents a well-studied menu for lunch and dinner. For hotel guests, the Steinbock classic is a five-course alpine dinner.
The recognition as Michelin Recommended underscores the quality of this modern cuisine, a testament to Tschager's youthful ambition and the team's dedication.
A dedicated package, "Chef's Table with René Tschager," allows guests to go deeper. It begins with an aperitif in the historic wine cellar, a chance to meet the chef, understand his philosophy, and hear about his challenges. This is followed by a surprise four-course menu of Tschager's "Basic" dishes—an introduction to his culinary style. The following evening shines with a refined five-course fine dining dinner, a showcase of his creative perfection.
At Ansitz Steinbock, the dining experience is woven into a broader stay of understated luxury, where the food, the setting, and the service combine to create something genuinely memorable.
