Funaokayama Shimizu sits on a residential street south of Daitoku-ji temple, in Kyoto’s Murasakino district. The restaurant is small and deliberate: a single counter of pale wood, seven seats, and an atmosphere that is both polished and calm. This is a space for adults, where the cook’s every movement is visible and the scent of rice steaming in an earthenware pot fills the room.

The chef and his craft

The owner-chef trained at two of Kyoto and Osaka’s most respected institutions – Kyo-Yamato and Wakuden – before opening Shimizu in 2018. He insists on ingredients chosen personally from the market, and on water: only the local well water is used, a detail that matters deeply in a kitchen built around rice. The signature dish is rice cooked in a donabe (clay pot), using water and carefully sourced grains from across Japan. Simple in concept, it carries a depth of flavour that comes from precision and patience.

Seasonal kaiseki on the counter

The menu is offered as a course, with three dinner options and a lunch service. Each course reflects Kyoto’s seasonal rhythm: fresh sashimi from that morning’s market, delicate presentations such as sea bream with yuba ankake, and vegetables that mark the turning of the year.
