The story
At Wing Lei, located at Wynn Macau, Executive Chef Chan Tak Kwong brings a deep knowledge of regional Chinese cuisines to every dish. His philosophy is rooted in patience and precision: mastering each ingredient and technique to transform familiar Cantonese classics into refined new experiences. This dedication has earned the restaurant two Michelin Stars and a Forbes Travel Guide Five-Star award, placing it among Macau’s most celebrated dining rooms.
The menu focuses on authentic Cantonese cuisine, with signature dishes that highlight Chef Tak’s artistry. The barbecued Ibérico Pata Negra Pork with Maple Syrup is a standout – the highest grade of Iberian pork is marinated in Chinese rose wine and Chu Hou paste, then triple-barbecued with maple syrup for a caramelized crunch that gives way to tender sweetness. Equally impressive is the steamed egg white with grouper fillet, finished with 30-year-aged tangerine peel and vintage Hua Diao, a dish that demands perfect control over time and heat to achieve its silky texture.
The setting matches the ambition of the kitchen. The main dining room features an iconic flying crystal dragon, a dazzling symbol of China’s rich history. For more private gatherings, nine private dining rooms offer oversized HD TVs and private washrooms, making them ideal for family meals or business dinners. The atmosphere is elegantly casual – gentlemen are asked to wear full-length trousers – and children aged five and above are welcome in the main room.
With its two Michelin Stars, Wing Lei offers a definitive taste of Cantonese cuisine in Macau. From the delicate dim sum to the bold flavors of the barbecued pork, every dish reflects a commitment to quality and craft that keeps guests returning.
