The story
Since 2011, Saffron has been a fixture for Thai cuisine in Macau, drawing diners to the 31st floor of Banyan Tree Macau for its panoramic views of Cotai. The space is elegant and serene, with a spacious interior that lets the food and the skyline share the stage. The restaurant has earned a Michelin Selected distinction, a recognition that aligns with its reputation as a destination for thoughtful, modern Thai cooking.
The kitchen is led by award-winning Thai chef Jan Ruangnukulkit, whose résumé includes time at a Michelin-starred restaurant named among the World’s 50 Best. At Saffron, she works with a team of Thai chefs recruited from critically acclaimed restaurants. Her tasting menus balance Thailand’s culinary essence—herbs, spices, and vivid colors—with a contemporary, artistic approach. The result is Thai food that feels both rooted and inventive.
The menu highlights several dishes that have become signatures. The Aromatic Tom Yam Tiger Prawn Soup delivers the classic sour-spicy balance with tiger prawns simmered in milk and lemongrass. The Southern Style Alaskan King Crab Curry pairs tender crab meat with a homemade spicy yellow curry that is both rich and bright. Another standout is the Glacier 51 Toothfish with Ginger and Tamarind Soup—an elegant broth with ginger, tamarind, and Thai herbs, paired with a sustainably sourced toothfish prized for its sweetness and delicate flesh. The Grilled Alaskan King Crab, marinated in turmeric-rich curry and grilled for smokiness, is finished with calamansi lime and pickled vegetables for contrast.
Beyond Michelin, Saffron holds a Thai Select Signature Certificate (2023–2026) and was named Best Restaurants in Macau (South East Asian) by Travel + Leisure Tastemakers 2024. The restaurant’s bar and dinner service (closed Tuesdays) make it a fitting choice for an evening where the food, the view, and the refined setting come together without pretense.
