Chef Darren Chin, a Michelin-starred chef, and his wife Nana pour their passion into a menu that honours the traditions of northern Thailand.
The restaurant draws its soul from Mama Nuanta and Papa Suwit, both raised in the Mae Ai district of Chiangmai. They began with a humble push cart selling som tum and grilled chicken. Mama Nuanta’s decades of experience in Lanna and Isaan cooking bring a homely, comforting depth to the kitchen. Papa Suwit is an Isaan grill master, lightly marinating meats and whole fish wrapped in turmeric leaves and salt, then grilling them over soft coals. Together, they shape the flavours at Gai.
Gai’s cuisine is a reinterpretation of Thai northeastern fare, often called Lanna food – “the sleeping beauty of world cuisine,” as the restaurant describes it. Every bite balances salty, sweet, spicy and sour, using the highest quality ingredients sourced across Malaysia and Thailand.
