The story
Rosamì takes its name from the rose and the Maltese word amí, meaning friendship. It’s a fitting introduction to a restaurant that describes itself as “produce-driven, One Star Michelin” and aims to break down the walls of fine-dining idealism. The welcome is genuine, the atmosphere refined without pretension. The kitchen works with the freshest seasonal ingredients from The Xara Gardens and trusted local suppliers, crafting a menu that changes with the season.
Executive Chef Davide Marcon leads the kitchen with a deeply personal vision. His “Carte Blanche” tasting concept is built around an odyssey — a journey across the Mediterranean inspired by Homer’s epic. Each course forms part of a narrative that unfolds during the meal, balancing Maltese tradition with a traveller’s perspective. Marcon describes Malta as Ogygia, an island of immersion and transformation, where he observes and reinterprets an ancient gastronomic culture. The menu is a story of discovery, belonging, and return, with flavours that feel both rooted and fresh. Dietary requirements can be accommodated without compromising the experience.
The restaurant occupies The Villa, a 19th-century palazzo in Balluta Bay that was once the summer residence of a leading Maltese industrialist. The building is one of the oldest in the area, with an imposing presence that sets the tone for an evening of understated elegance. There is outdoor seating, a private dining room, and the option to book the whole space for events. The dress code is smart casual, and guests must be at least ten years old. The result is a contemporary fine-dining experience that feels both grand and accessible — a place where the food, the story, and the setting come together in harmony.
