The story
Terrone is a seasonal Mediterranean restaurant set on the Birgu waterfront at Fort St Angelo, with a daily-changing menu that follows what’s best available from the market. Cooking draws on Italian and Maltese traditions, with dishes shaped by wild fish, local seafood, game, meat, and produce at their seasonal peak. Guests can choose from à la carte options or a tasting menu that reflects the kitchen’s commitment to simplicity and quality.
At the helm is chef Adrian Hili, who began his career at Melbourne’s Rockpool before refining his skills at the world-renowned River Café in London. In 2014, he brought his produce-driven philosophy to Malta, founding Terrone. Since then, the restaurant has earned multiple accolades, including six consecutive years of Michelin Bib Gourmand recognition — a mark of good quality, good value cooking that Terrone delivers with consistency.
The menu changes daily and is guided by seasonality and market availability. Alongside à la carte dishes, Terrone offers a Terre e Mare tasting menu — a seasonal journey through land and sea, designed to be shared by the table. It showcases the kitchen’s approach: produce-driven, balanced, and deeply respectful of its sourcing.
A set lunch is available Monday, Thursday, Friday and Saturday (excluding Sundays and public holidays), limited to 25 guests per service and bookable online only.
