Metate, in the El Tezal neighborhood of Cabo San Lucas, is more than a restaurant—it is a destination. Honored with a Michelin Bib Gourmand for good quality, good value cooking, Metate builds each plate on the legacy of the molcajete and the metate, the ancient stone tools that give the restaurant its name. Here, Mexican cuisine is simple yet layered, combining techniques passed down through generations to create dishes that feel both familiar and surprising.
The kitchen works with fresh, farm-to-table ingredients, turning them into ceviches, salads, and tlayudas that burst with flavor. Start with the shrimp ceviche marinated in fermented lime mango sauce, or the rustic salad with lettuce marinated in honey and garlic ferment, pickled carrots, and caramelized chili peanuts. The burrata with cold pink mole and grasshopper soil is a standout, as are the grilled elotes slathered in serrano mayo and cotija cheese. For mains, the risotto with a tamarind twist (tamal relleno de camarón y chapulines) and the leche-raised chicken are both praised.
The bar program centers on mezcal, with cocktails like the Jorge Negrete (mezcal, tepache, cinnamon syrup, spices) and the Beso de Oaxaca (mezcal, Chambord, berries, bitter chocolate). The space is warm, with attentive service that makes every guest feel welcome.
