A Personal Vision of Mexico

At Lorea, chef Oswaldo Oliva’s cooking is a declaration of identity. After a decade cooking in Michelin-starred kitchens abroad—most notably at Mugaritz with Andoni Luis Aduriz—he returned to Mexico to build his own project. “Cooking is a way of building memory,” he says, and his table is where that act unfolds. His approach transforms season, landscape, and culture into narratives where Mexico recognizes itself. The result is contemporary Mexican cuisine that feels both deeply rooted and quietly surprising.

The HUMO Season

Lorea’s current tasting menu, “HUMO,” takes smoke as its guiding element. The question—what is smoke for Mexico?—unfolds across seven courses. It appears as geology: the volcanic regions whose ash enriches the soil. As ritual: copal incense and the collective memory of cooking over fire. And as a global link, with volcanic vineyards from Etna to the Canary Islands whose aromatics echo Mexican landscapes. The menu moves from hand-held snacks to seasonal vegetables, seafood, and a choice of two meats, ending with a contrast of comfort—pineapple and corn—and a surprising seaweed-based ice cream with smoked Osetra caviar. Wine pairings are available, including a non-alcoholic option.

Three Ways to Dine

The restaurant offers three distinct experiences. In the main dining room, guests enjoy the full tasting menu in a setting designed for closeness—an open kitchen creates a silent dialogue between chef and diner. At the Kitchen Table, a seat at the bar facing the open kitchen adds interaction and spontaneous extras. For private gatherings, the exclusive salón privado overlooks the wine cellar and seats guests in front of a curated view of the restaurant. Lorea’s recognition as a Michelin Recommended restaurant in 2026 underscores its place in Mexico City’s evolving gastronomic landscape, but the real draw is the quiet confidence of a kitchen that knows exactly what it wants to say.
