In Monterrey’s upscale Valle Oriente district, Vernáculo brings the essence of northeastern Mexico to the table. The restaurant’s name, meaning “native” or “of the place you are from,” sets the tone for a deeply regional experience. Chef Hugo Guajardo, who also runs the celebrated El Jonuco—a project focused on authentic regional cooking from the municipalities of Nuevo León—founded Vernáculo to present a contemporary proposal in the city.

Cooking with Native Ingredients

Vernáculo is described as “cocina del terruño” — cooking of the homeland. The kitchen is inspired not only by the region’s gastronomy but by its entire context: the aromas, textures, materials, customs, utensils, vegetation, and the language of the land, as well as the artisans and field workers who shape it. The food draws on native ingredients from Nuevo León, blending old recipes and new ones adapted for the modern world. This is Mexican cooking that feels both rooted and fresh.
