At Ledeboer in Almelo, Patron Cuisinier Rick Blanken and his team focus on recognizable flavours, artisanal preparation, and a genuinely welcoming atmosphere. Since day one, the restaurant has aimed to offer more than a meal – it is an evening out, whether you come with friends, family, business associates, or just the two of you.
The kitchen works with changing menus built around seasonal products and attention to detail. Guests can choose a tasting menu or select à la carte. The restaurant’s approach has earned it a place in the Michelin guide, a recognition that speaks to the consistency and quality of the cooking.
The menu at Ledeboer changes with the seasons, showcasing pure flavours and high-quality ingredients. The standard Ledeboer menu includes dishes like salmon with fennel, olive oil, and lime; cod with butter, asparagus, and wild garlic; and halibut with pumpkin, Livar, and chives. The meal progresses through sweetbread, beef, Brie, and desserts such as peach with white chocolate, lemon thyme, and almond, or strawberry with pink pepper, basil, and vanilla.
For those who prefer a plant-based meal, Ledeboer Groen offers a fully vegetarian menu – vegan options are available on request. Dishes include paprika, pointed cabbage with hazelnut, eryngii mushrooms, and Jerusalem artichoke. The vegetarian menu mirrors the structure of the main menu, with the same careful composition and seasonal focus. On Wednesdays and Thursdays, shorter 3- and 4-course options are also available.
A distinctive feature of Ledeboer is the private dining experience in the original bank vault from 1909, located in the cellar of the stately building. The vault can be reserved for groups of 8 to 12 people, who are served a 6- to 8-course Private Dining menu. The space is not easily accessible by wheelchair due to stairs and narrow corners, but the team makes every effort to assist guests discreetly.
