The story
Step onto the restored 1910 clipper Hoop op Welvaart moored in the Amersfoort harbor, and you find De Saffraan, a destination blending French cuisine with distinct Asian accents. This vessel has hosted guests since 2007 under the direction of patron-cuisinier Kars van Wechem and sommelier Monique Korteschiel, who met while working at De Librije in Zwolle. The interior feels both chic and relaxed, using natural colors and dried botanicals to create a family-like atmosphere within the historic hull.
The kitchen centers on local ingredients, reserving imports for elements that require precise sourcing to match the desired texture. Van Wechem layers these components with playful contrasts, like sea bass baked on the skin accompanied by chicken liver cream and smoked eel dashi. Other signatures include a wagyu main with shallots and maggi plant, or a lamb neck confit served with lardo di collonato and a stroganoff cream. This balance of French technique and Asian flavor profiles defines the tasting menu, where vegan pâté meets miso and yellowfin tuna tataki receives a Thai dressing.
Monique Korteschiel designs the beverage program to complement the food, drawing from diverse regions including Syria and Lebanon for unique varietals. She offers many wines by the glass and includes curated non-alcoholic options for those avoiding spirits. In warmer weather, diners can move to the deck terrace to watch the Eem canal traffic while enjoying the view toward the historic Koppelpoort. The service remains attentive yet unobtrusive, ensuring the focus stays on the meal.
