In the heart of Amersfoort, De Saffraan has earned a Michelin Recommended distinction for its thoughtful, ingredient-driven cooking. Since opening in 2007, the restaurant has built a loyal following by balancing top-level technique with genuine warmth.
De Saffraan is the work of Monique Korteschiel and Kars van Wechem. Their paths crossed in Zwolle, each bringing experience from bistros, hotels, and even three-star Michelin kitchens. Together they created a place where the whole experience matters—from the welcome to the last glass of wine. "Vakmanschap, Beleving en veel plezier" (craftsmanship, experience, and lots of fun) remains their guiding principle.
The dining room is modern and spacious, with natural tones and fresh flowers that give it a clean, warm feel. It’s a setting that invites relaxation without sacrificing elegance. The team is continuously fine-tuning the details to make every guest comfortable.
Chef Kars van Wechem and his kitchen team focus on developing flavours, textures, and temperatures. They work primarily with high-quality Dutch ingredients, sourcing from abroad only what cannot be found locally. Creativity and craftsmanship drive every dish, whether from the tasting menu, prestige menu, or à la carte.
Monique curates a wine list that spans countries and styles, with open wines selected to match the dishes. Alcohol-free pairings are also available, reflecting a commitment to making every guest feel looked after. The goal, she says, is to share their enthusiasm and create an unforgettable lunch or dinner.
