The story
Restaurant 212 in Amsterdam crafts contemporary cuisine around a sixteen-seat counter overlooking an open kitchen. Founders Richard van Oostenbrugge and Thomas Groot established the venue in January 2018 before relocating from their former post at Bord’Eau. The kitchen builds its reputation around concentrated flavor pairings and tactile presentation. Confit langoustine rests in a rich dashi and Albuféra sauce, finished with ground coffee and shaved katsuobushi for depth. Diners often order the crispy Jerusalem artichoke that arrives whole and gets smashed tableside to release a filling of Dutch shrimp, Belper Knolle cheese, and garlic vinaigrette. Poached sea bass served with smoked eel and a sauerkraut black truffle jus rounds out a menu that favors harmony over spectacle.
Guests gather around a U-shaped arrangement of half-round banks facing a stainless steel pass where the brigade works in steady rotation.
