The menu shifts with the calendar while keeping core French cuisine principles intact. Heirloom tomatoes paired with ricotta and Espelette pepper appear alongside a baked duck liver brioche finished with truffle mayonnaise and crab. Lobster bolognese serves fresh pasta tossed in a rich shellfish foam, and turbot cooked on the bone arrives with green asparagus. Summer truffle risotto rounds out the selection with poached eggs and chanterelles.
