A quarter-century of sustainable North Sea seafood at Visaandeschelde in Amsterdam-Zuid. Michelin Recommended. Fresh, whole-fish cooking on Scheldeplein.

The story

Visaandeschelde Amsterdam | Michelin-Recommended Seafood Fine Dining

For more than 25 years, Visaandeschelde has anchored the Scheldeplein in Amsterdam-Zuid as a destination for seafood fine dining. Restaurateur Michiel Deenik opened the doors on 30 March 1999, and the restaurant quickly earned a 9- from critic Johannes van Dam. Today, it holds a Michelin Recommended distinction, a recognition that matches the kitchen’s steady, season-driven approach.

The name is a direct reference to its location on the Scheldeplein. The restaurant’s identity is built around whole, sustainable fish sourced almost exclusively from the North Sea. The kitchen team breaks down each fish on the premises, using every part and wasting nothing. The seasons dictate the menu, which changes regularly to reflect what is freshest.

Guests can order à la carte or choose the monthly Chef’s Menu. A recent iteration of that menu opened with a smoked salmon rillette with Amsterdam pickles, moved through ling with fennel and beurre blanc, chipirones with mussel and tomato, and finished with a market-fresh fish main alongside asparagus and peas. The wine list leans toward the old world, and a paired selection is offered for each course length.

The dining room carries a “fresh-chic” look, and the service team is described as professional with an informal edge. In warmer months, the terrace opens onto the square. Michiel Deenik, together with his wife Saskia, is now preparing the next generation to carry the restaurant forward, aiming for another 25 years.

It was in 1999 that Visaandeschelde opened its doors in Amsterdam-Zuid, right next to the RAI. Guests from the neighborhood and surrounding areas soon found their way to the kitchen of restaurateurs Michiel and Saskia Deenik. Fish continues to play the leading role, and guests have never left. In fact, making a reservation is an absolute must for this welcoming ambiance, where the service staff warmly greets you and ensures you enjoy an excellent lunch or dinner. A tidy and cozy atmosphere pervades the carefully appointed narrow dining room, featuring a black-and-white checkered tile floor, small tables dressed in crisp white linens, comfortable black leather wall banquets, and a mirror wall adorned with blue glass fish decorations. Alongside indispensable classics on the menu, Deenik continuously introduces innovative dishes centered around one principle: the fish used must be fresher than fresh. The menu is seasonal, and alongside à la carte selections, there is a monthly rotating chef’s menu. We begin with a platter of fresh Irish Mór oysters, simply served with a shallot vinaigrette. Paired with a bottle of balanced and pure 2022 Bourgogne-Chardonnay by Benoit Girardin, we sample bite-sized canapés consisting of crispy rice topped with a piece of freshly caught soft tuna, finished with wasabi, fish roe, and chives. Colorful and deliciously flavorful. We also give our seal of approval to the stuffed eggs with a generous dollop of Imperial caviar. For the starter, the Visaandeschelde salad with lobster and duck liver curls, topped with truffle and drizzled with balsamic. A classic you can never get enough of. We keep the main course equally pure: a substantial sole à la meunière with its own jus. Simply top-notch.

Visaandeschelde in chic Amsterdam-Zuid is now an indispensable part of this guide. This is due to the impeccable quality served here, as well as the vibrant atmosphere and the consistently attentive, dedicated, and cheerful service. For well over twenty-five years, Michiel and Saskia Deenik have been running their family business, where fish takes center stage. The fresh ambiance features a black-and-white tiled floor, leather wall benches, tables dressed in white linen, and playful artwork on the walls depicting fish, crustaceans, and shellfish. The menu offers selections from various tasting menus, including one entirely vegetarian option. The wine list is highly extensive, and sommelier Sander Eefting has a keen sense for surprising new discoveries. We begin with a plate of incredibly fresh plain oysters served with a red wine vinegar vinaigrette made with shallot, lemon, and pepper. This is followed by buttery soft gravlax accompanied by crispy rösti, crème fraîche, fennel, herring roe, and dill. An extra 10 grams of caviar can be added as a supplement. The subsequent bouillabaisse is sublime, generously packed with crustaceans and shellfish and served alongside gruyère cheese and rouille. On summer days, you can dine outdoors. It is not cheap here, but that apparently does not put off the guests. The place is always packed.

For years a hit with high-society regulars, locals, as well as visitors from home and abroad. In this fine dining seafood restaurant run by owner-chef Michiel Deenik, you can indulge in briny oysters, rich seafood platters, lobster, caviar, and crisp-fresh fish. The decor of this atmospheric restaurant is thoroughly modern, featuring white-gray tones, a black-and-white tiled floor, tables dressed in white linen, black leather wall benches, matching chairs, and maritime accents. The wine list is very extensive, featuring labels from both old and new world countries, and there are plenty of wines available by the glass. It’s busy, and a relaxed, buzzing atmosphere prevails. Before lunch begins, we enjoy a straight-up flavor bomb: a croustade with sturgeon shrimp, rouille, and bouillabaisse. Our first course offers roughly chopped bavette tartare with scallop, fried Dutch shrimp, lobster cream, and a Chinese chive vinaigrette. A refined and blissful start. Sommelier Nikki Mulder pairs this with an Italian Trebbiano di Lugano Limne 2021, featuring a delicate and refined aroma, subtle fruity notes, and a fresh finish. This is followed by skin-on pan-seared mullet with octopus, tandoori, and pearl couscous. The fish is super fresh, cooked to perfection, and the octopus is nicely tender, though the tandoori sauce is somewhat overpowering. We conclude with grilled peach accompanied by redcurrants, almond cream, and lemon sorbet. Light and summery. Be sure to bring a well-stuffed wallet, as the prices are quite steep for the Randstad area.

A completely deserted street in chic Amsterdam South. This is also evident from the clientele that frequents this pricey restaurant. The place is bustling, with waves exchanged and conversations held with friends and acquaintances. Owner-chef Michiel Deenik is renowned for the exquisite fish dishes that take center stage in his kitchen. The menu boasts a rich selection of fish, crustaceans, and shellfish, alongside a dedicated oyster list, caviar available in various portion sizes, lobster, fruits de mer, and a rotating 'fish exclusive' dish. For an amuse-bouche, we get a crisp with sturgeon shrimp, rouille, and bouillabaise—a delightful start. Choosing among such delicacies is difficult, but we opt for a creamy crustacean bisque with fennel, lobster chunks, and Pernod, accompanied by two house-made shrimp croquettes and Löwensenf mayonnaise. We certainly have no regrets. The soft-shell crab with a foamy curry is equally sublime. The recommended Brunel de la Gardine, Côte du Rhône, with its lovely tropical notes of mango and citrus, pairs seamlessly. The daily special features a harder fillet pan-seared perfectly on the skin, served with fregola sarda, peas, mint, and a refined bisque. Kudos to the kitchen brigade, who are not only highly skilled but also cheerful, always making time for a friendly word or a joke. A top-tier establishment, though the bill reflects that accordingly.

Located in Amsterdam-Zuid, Visaandeschelde attracts guests from home and abroad who often have a bit more to spend. The dining room is subtly and tastefully decorated with all sorts of maritime elements. Fish takes center stage here, and once again, we are pampered with a few delicious dishes in which fresh fish naturally plays the leading role. We opt for a four-course menu that begins with a light appetizer of briny langoustine, avocado, and burrata, accompanied by tangy passion fruit. Next comes something heartier: well-grilled octopus with hummus, sesame, and pomegranate; essentially fish prepared in an Oriental style. The red bream in the main course is the "market fish," perfectly cooked. Unfortunately, the accompanying beets are rather coarse, and the dish doesn't look particularly appetizing. The flavors of both the fish and vegetables are merely adequate. We finish with a wonderful dessert of peach, honey, sabayon, and crème anglaise, served in a crispy cylinder of shortcrust pastry. A splendid finale. Our proficient sommelier serves exclusively well-matched wines as part of our wine pairing, notably a lightly spiced red from Languedoc that surprisingly complements the bream. The staff works diligently yet still makes time for a personal touch. The atmosphere is relaxed, but the bill is steep. We view this as a point worth noting.

A household name for over twenty years in Amsterdam and far beyond. This cheerful seafood specialty restaurant by Michiel Deenik is housed in a cozy, informal setting. It features a mosaic tile floor, tiled walls, linen-draped tables, black leather banquette seating, and matching chairs. Everyone in Amsterdam-Zuid knows where to find Visaandeschelde, and it’s equally popular with business diners. Thanks to a special business power lunch, you can easily be out and back home within an hour. The menu changes with the seasons. And if you’d like to sample an extensive fruits de mer platter? That’s possible too—just give a heads-up in advance so the kitchen can make the necessary arrangements. Because fish must swim, the wine list, curated by sommelier Nikki Mulder, is exceptionally broad, featuring labels from both Old and New World regions, with many wines available by the glass. In short: a delightful place to celebrate life with friends, family, or simply enjoy a lovely evening for two.

More than twenty years ago, owner-chef Michiel Deenik opened Visaandeschelde at Scheldeplein. This fish specialty restaurant has become an integral part of the capital. The menu features dishes primarily tailored to the seasonal catch. While beloved by business diners, the informal, cozy setting also welcomes couples, friend groups, younger crowds, and seniors. After a selection of delightful amuse-bouches—including a pastry boat with corvina and black sesame, and sourdough ravioli stuffed with scallops and sardines—we move on to the proper meal. We begin with mackerel “Escabeche,” featuring roasted marinated mackerel served on the skin, accompanied by horseradish, red carrot, and kohlrabi. Naturally, we must sample the classic “Visaandeschelde Salad” with lobster, truffle, house-made mayonnaise, and duck liver curls. Some dishes are simply timeless. We continue with a flawlessly executed bouillabaisse and a tasting of small plates such as a gratinated oyster, a shrimp croquette, and soft-shell crab with gamba. In the glass, a Montfrin la Tour from the Languedoc, rustic yet softly velvety. The cheese board is robust and richly varied, ranging from Shropshire to Pierre Robert, and a glass of Rafale Merlot pairs beautifully with it. The service, led by hostess Lisa Bakker, is attentive and always takes time for a conversation, even when the restaurant is packed. A fine address.

For years, a constant fixture in Amsterdam's Rivierenbuurt and in our guide. Owner Michiel Deenik and head chef Remco Kroeze guarantee high-quality classic and innovative fish dishes. The smoked salmon with soy pearls, wasabi cream, and yuzu gel, along with the soft-shell crab with avocado, wakame, sweet sambal, and prawn tartare, are well-received. However, the presentation of the halibut lacks subtlety, and the six-dish fish tasting is quite lavish (three or four would have been plenty). It is noticeable that the dish descriptions on the menu sometimes differ from what is actually served. We have nothing but praise for the desserts. They are based respectively on banana, chocolate, peanut, and coconut; pineapple, coconut, white chocolate, and – yes – green curry. The interior of Visaandeschelde is modern: a black-and-white tiled floor, a mirrored wall, and black chairs. If possible, reserve a table with a view of the open kitchen, and observe that the kitchen brigade – even at full capacity – shows not a trace of stress and works with exceptional order. The service is pleasant, informal, and highly competent.
