The story
Hoog Holten sits at the edge of the Sallandse Heuvelrug, a landscape of rolling hills, heathland and deep woods. The building itself was originally a hunting lodge, built in 1920, and later transformed into a hotel before the Second World War. Today, it is a restaurant and hotel where the focus is on simple hospitality in a beautiful setting.
The kitchen is led by chef Tomas, whose cooking follows the seasons. His summer menu, launched in June, is built around fresh ingredients and seasonal flavours. Guests can enjoy breakfast, a refined lunch or a full dinner in the main restaurant, the glass-walled conservatory, or on the terrace that opens directly onto the forest. The style is modern cuisine, precise and ingredient-led, without unnecessary fuss.
Hoog Holten has been listed in the Michelin Guide and awarded 13 points by Gault&Millau — recognition that speaks to both the cooking and the warmth of the welcome.
Beyond the dining room, Hoog Holten offers 24 hotel rooms, facilities for business meetings and weddings, and a space where guests can hike or cycle straight from the door. Under new owners Dominique van der Valk and Wilco Schuitemaker, the restaurant continues to evolve: a recent renovation of three bathrooms and the introduction of a High Wine Sunday are small signs of attention to detail. Open seven days a week, it is a restaurant that invites you to stay a while.
