The story
De Stroper anchors a seventeenth century corner building along the historic canal, serving focused seafood in the heart of Dordrecht. The compact dining room holds roughly 45 guests beneath an acoustic ceiling, while painted nautical motifs trace the walls. A small half-open kitchen sits at the centre of the floor, letting diners watch the brigade work through narrow service windows. This layout turns every evening into a quiet observation of technique rather than a staged performance.
The kitchen has passed through several hands since the founder originally tracked eels in the nearby Biesbosch wetlands. Patrons have watched Edwin Roestenberg shape early menus before Mitchel de Deugd and currently Kevin van Asch took the helm in autumn 2023. Every plate relies on certified sustainable seafood catches, a commitment that aligns with the team’s long standing financial support for The Ocean Cleanup. The brigade maintains this standard without expanding the footprint, keeping portion sizes tight and sourcing transparent.
Sommelier Mark Bakker structures wine lists around crisp whites and light reds that cut through rich seafood preparations. Diners frequently return for lightly smoked mackerel dressed with fennel and harissa cream, followed by seared sea bass paired with fermented rhubarb vinaigrette. Hearty mains like perfectly glazed cod arrive alongside sea lavender and seaweed crackers, then finish with strawberry basil mousse or vanilla crème brûlée. The kitchen trades showmanship for consistent execution across the seasonal specials menu.
