The story
Het Spijshuys in Drachten serves French cooking rooted in classical technique and regional sourcing. Chef Gerry Trouw and co-owner Willemijn Elzinga moved their operation from central Drachten to a renovated village café in Boornbergum to keep quality high and prices approachable. After years running a Michelin Bib Gourmand establishment nearby, the duo relocated to meet growing demand. Their consistent execution earned consecutive Lekker500 Top 500 rankings.
The French kitchen shifts regularly as Trouw matches current produce to a straightforward structure. Diners often encounter a cucumber and fennel soup layered with goat cheese, or a cod roulade paired with crispy pani puri. Roasted watermelon appears alongside turbot, balanced with sangria and chorizo oil, while Bresse chicken arrives with a sharp mustard jus. Each plate avoids heavy sauce work in favor of bright acidity and clean ingredient expression.
The dining space retains the relaxed character of its former life as a local café. Tables are set with linen napkins and clear glassware, creating an environment where guests can linger without formal restrictions.
