The story
At L'Echappée Belle, Camille and Grégory welcome guests to a calm corner between Visé and Maastricht, in the village of Lanaye. Their cooking is built on three pillars: quality, proximity, and generosity. They practice what they call "cuisine d'émotion" – a cooking style that marries technique, creativity, and deep respect for the raw product. The setting itself shifts with the seasons: a terrace for summer dining, a wood fire for winter warmth.
The menus change constantly, guided by what is at its peak. Each new carte is a reinvention, balancing meats, fish, and vegetables – with vegetables taking a priority role. The kitchen extracts maximum texture and flavour from locally grown produce. Five set formulas are offered, from the three-course "La petite échappée" (€47) – which the restaurant notes has "all the qualities recognised by the Michelin Guide" – to the five-course "Le Mia 5" (€60) for those who prefer to leave the choice to the chef. A lunch menu is available at €35, changing monthly. The Bib Gourmand award reflects this commitment to good quality, good value cooking.
L'Echappée Belle makes local agriculture a priority. Meats come from regional farmers such as Charly Goeders, Georges Goblet, and Ferme d’Artagnan. Sustainable fish – including trout from La Commanderie – is respected. Vegetables are always seasonal and sourced close by, and the restaurant maintains its own garden where strawberries, cherries, chillies, walnuts, and herbs are cultivated. This direct connection to the land defines the modern cuisine served here: vibrant, grounded, and honest.
