The story
The word Doyy translates roughly to “fulfillment.” For host Yavuz Yildirim, that meaning – encompassing satisfaction, enjoyment, and contentment – is the driving force behind every evening at this Eindhoven restaurant. Together with chef de cuisine Daan van Lieshout, he creates a dining experience built on genuine hospitality and precise, balanced cooking.
Van Lieshout, who trained at Michelin-starred restaurants Wollerich in Sint-Oedenrode and Cordial in Oss, brings a clear philosophy to the kitchen. “We cook on a French base with Asian influences,” he says. “Finding the balance between extreme flavours is number one for me: sweet, sour, bitter, salty, and umami.” That approach defines the menu, which the restaurant describes as refined dishes built on a classic French structure, drawing inspiration from Asia.
The result is a style of modern cuisine that plays across the full spectrum of taste. Guests can choose from multi-course menus, including a Signature Menu that explicitly explores the five fundamental tastes, or a dedicated vegetarian menu. The à la carte selection ranges from starters like king crab with fennel chiboust and an oriental bisque to main courses such as langoustine with couscous and a sabayon. DOYY also offers its own caviar service, with pairings that include a striking combination of vanilla ice cream, caviar, and olive oil.
Yildirim’s roots in Azerbaijani and Turkish culture inform the front-of-house atmosphere. “In my culture, good food and hospitality are central,” he explains. “We ensure that the guest wants for nothing during an unforgettable culinary evening.” The restaurant’s recognition as Michelin Recommended in 2026 reflects the consistency of that vision – a quiet confirmation of what regulars already know.
Located on Hoogstraat in Eindhoven, DOYY serves lunch and dinner from Tuesday through Saturday, with a terrace for warmer months. The cooking is grounded, the welcome warm, and the ambition clear: to offer a sense of fulfillment, one plate at a time.
