The story
At De Gaffel in Valthe, chef Roderik Seubers and his team work with what the seasons and the surrounding Drenthe landscape provide. The kitchen favours organic, responsibly sourced ingredients, many of which come from their own garden or local producers. This commitment to freshness and terroir is the foundation of a menu that changes regularly, built around honest, flavour-driven modern cuisine.
Seubers discovered his passion for cooking early, spending hours in the kitchen with his grandfather, who taught him the craft. Today, he leads a dedicated team that includes sous-chef Remko Beek, a familiar presence at De Gaffel for over fifteen years, and host Gerwin Groote, whose no-nonsense style of hospitality puts guests at ease. Together, they create an atmosphere that is both welcoming and refined.
Inside, the dining room is cosy and inviting; when the weather allows, the outdoor terrace offers a relaxed setting to enjoy a meal. Guests can choose from surprise menus that showcase the kitchen’s best work, with each plate reflecting the care taken in selecting and preparing the ingredients.
The restaurant’s approach has earned it a place in the Michelin guide, a recognition that speaks to the consistency and quality of the experience.
