The story
At the point where the Spaarne river meets the Bakenessergracht, in the heart of Haarlem, MANO Restaurant occupies a carefully restored monumental building. The interiors, designed in collaboration with Smeele Design, blend urban sophistication with a club-like warmth—an atmosphere that feels both intimate and distinctly of its place. This is the setting where chefs Kevin Kion and Daniël Damen have brought a long-cherished dream to life.
Kevin and Daan have been a team since childhood, whether on the football pitch or in the kitchen. Their partnership is the engine of MANO. While Daniël focuses on the depth and balance of flavours, Kevin excels in the visual composition of each plate. Together, they push each other to new levels, driven by inspiration drawn from seasonal produce, travel, and their shared creativity. Their approach is rooted in deep respect for the product, technical skill, and a commitment to sustainable practices.
The menu at MANO is a reflection of the seasons, built around locally sourced ingredients from nature. The chefs let the produce speak, crafting dishes that leave a lasting impression without unnecessary embellishment. This dedication to quality and place has earned MANO a Michelin Recommendation, a recognition that aligns with their philosophy of honest, refined modern cuisine. The dining experience unfolds over roughly three hours, allowing the kitchen team to prepare each course with precision and care.
The wine list mirrors the kitchen’s ethos. Kevin and Daan have chosen to stay close to home, selecting classic European wines, preferably organically grown. It is a tribute to tradition and respect for the land, offering guests a versatile journey through vineyards across the continent. The pairing enhances the seasonal menu, completing the experience.
