The story
At Kasteel TerWorm, the setting is as compelling as the plate. This centuries-old castle in Heerlen offers a dining experience that feels both grand and intimate. The kitchen brigade, as the restaurant puts it, works "every day with passion, enthusiasm and attention" – a spirit that earned the restaurant a Michelin Recommended distinction for 2026.
The menu, called Menu Nature, changes with the season. A recent edition (from June) shows a kitchen that moves confidently between French refinement and Asian flavours. A starter of turnip and watercress pairs a potato mousse with a broth of watercress and kombu. Next, La Ratte potato and Coeur de Boeuf tomato arrive as a stampot with pickled lemon and a Jean Vignard sauce brightened by aji amarillo. Tortellini follows, filled with sweet potato and carrot kimchi, served with a kale and lemongrass sauce. Gnocchi with Belper Knolle cheese and artichoke is sauced with local Heerlense black and gold cheese. Dessert brings marinated blackberries with blackberry and Martini ice cream and a chocolate-Chartreuse ganache.
The menu is available in four courses (€75) or five courses (€90), with optional wine pairings (€45 and €50). A cheese board supplement of €10 is noted. The kitchen states that vegan dining is not possible, but the menus are clearly built around vegetables, seafood and dairy with a strong European base and clever Asian touches – a fusion that feels considered, not forced.

The castle’s history, the careful service and the confident, ingredient-led cooking make this one of the most interesting tables in Limburg.
