The story
Restaurant Darwin, set in a historic farmhouse on the edge of the Terworm nature reserve in Heerlen, is a place where the kitchen never stands still. Chef Daan van der Wielen leads a team that describes itself as passionate, focused, and obsessed with good food. Their guiding principle is "Evolutionary Gastronomy" — a promise that every dish is in constant development, refined and reimagined in a search for surprising new flavours and combinations.
The starting point for van der Wielen’s cooking is the world kitchen, not a fixed idea of what a perfect dish should taste like. He draws inspiration from every corner of the globe, working with the seasons and local suppliers. “I want to amaze and surprise my guests with a dish,” he says, “and preferably tell a story with it — a story that evokes an emotion.”
Guests are offered a choice between two tasting menus. The Charles' Menu features a progression of refined, international dishes — from beekridder (river crab) with cucumber and liquorice to lamb with hummus and sumac. The Galapagos Menu is a vegetarian alternative, built around ingredients like watermelon, saffron, and aubergine, without compromising on depth or ambition.
A carefully curated wine list, developed to create optimal pairings, accompanies each course. For those who prefer non-alcoholic options, team member Pauline creates dedicated mocktail pairings that either echo a dish’s flavours or offer a playful counterpoint.
The restaurant seats 34 guests and, when weather permits, serves lunch and the start of dinner on a terrace overlooking the surrounding nature. The building’s monumental character means it is less accessible for wheelchair users, but the setting — surrounded by greenery — is exactly what drew van der Wielen to this corner of Limburg.
Restaurant Darwin's commitment to constant refinement has earned it a place in the Michelin guide, a recognition that reflects the team’s daily dedication to their craft.
