The story
At La Diva in Leiden, chef Frank Hakkenberg builds his daily tasting menus around French and Asian cuisine. He prepares every plate himself in a compact open kitchen, relying on day-fresh seasonal produce rather than a static menu. As a partner of the Vis & Seizoen foundation, he ensures seafood comes from responsible fisheries while sourcing greens directly from field farms.
The kitchen turns simple ingredients into structured plates through precise heat control. Thin slices of yellowtail kingfish meet jalapeño, avocado, and cucumber before being finished with a cooling sorbet. Langoustine baked inside crispy kataifi pastry carries a hoisin glaze alongside a rich shellfish sauce and shredded spunk cabbage.
Narrow corridors line the dining area. Small linen-dressed tables sit opposite long upholstered wall benches. This intimate layout keeps sightlines open to the active counter, allowing guests to watch the preparation unfold without crowding the passage.
The relaxed rhythm stems largely from Kim Hakkenberg’s steady management. Guests choose how many courses they wish to enjoy, typically ranging from four to six. This steady balance of refined French cooking and unhurried hospitality earned the kitchen repeated placement in the Lekker500 Top 500 guide.
