Recognized in the Lekker500 Top 500, Bistro Francis in Maastricht delivers a precise approach to French cooking that honors a multi-generational lineage. Chef Paul Keijdener opened the dining room in November 2023 inside Hotel Kint, a structure originally built for German Franciscan nuns. His culinary education happened at home, learning directly from his father, the late Paul Keijdener of Chez Paul, and his grandmother Ida van den Hurk, who earned the second Michelin star ever awarded to a woman in the Netherlands. Claudine Keijdener joined as restaurant manager in 2025, steering daily operations with a focus on steady hospitality.

A lightly seared portion of fresh tuna arrives with dashi and an antiboise sauce that cuts through the richness without overwhelming the fish. The elegant Hotel Kint, with its in-house Bistro Francis, is now housed in the former Franciscan convent (later the Sint Joseph Institute), founded in 1883 by German Franciscan nuns. The sisters would hardly recognize their former convent today, as it has taken on a distinctly urban, thoroughly contemporary look. Like the building itself, young chef Paul Keijdener carries family history with him: he is the son of the late Paul Keijdener, who ran Chez Paul, and the grandson of the late pioneering female chef Ida van den Hurk, the second woman in the Netherlands ever to receive a Michelin star. The welcome is warm, and the aperitif—a refined Jaffelin Crémant de Bourgogne Brut Rosé—is fresh and festive. Paul cooks French cuisine (as one might expect with such a restaurant name), blended with contemporary cooking techniques and modern influences. Lightly seared, live-fresh tuna with dashi and an anti-boise sauce is balanced and lively, while the vegetarian coeur de boeuf with burrata, caramelized onion broth, and a buckwheat crisp reflects the chef’s creativity and exudes a gentle softness. The standout dish is cod, served with softly cooked fennel, cauliflower, and mushroom foam, accompanied by a subtly spicy Laurenz V. Forbidden Grüner Veltliner. My dining companion enjoys vegan cannelloni made from savoy cabbage with yellow oyster mushrooms, mushroom foam, and a cabbage salad, paired with a golden, fresh, and fruity Coteaux Bourguignon from Château de Chemilly. A small suggestion: the descriptions accompanying the dishes and wines could be slightly more detailed. Welcome to Lekker!
