Celebrated table
The story
De Watertoren Rotterdam serves contemporary cuisine from the ninth and tenth floors of a restored industrial structure. Guests choose their vantage point before arriving at the table. The ninth level places diners directly beside the active pass, where cooks plate each component under bright lights. The Gault&Millau guide awarded this kitchen 13.5 points in 2026, praising the sightlines that accompany every plate.
The cuisine follows a structured five course path designed around seasonal ingredients. Plating stays clean and deliberate, allowing texture and temperature to carry the conversation. Diners often pause between courses to watch the kitchen maintain its steady rhythm. The elevated position above the city ensures the meal feels unhurried during peak service hours.
Renovation work preserved the original concrete shell while inserting modern glazing across multiple levels. Sunlight floods the dining room during afternoon service, shifting to evening shadows as the sun drops below the skyline. Tables sit close enough to share stories yet far enough to keep conversations private. Visitors return for the same reason they arrived, drawn by the clear lines of sight both inside the room and toward the horizon.
