The story
Restaurant Huson opened in 2003 and has been a constant presence in Rotterdam’s dining scene ever since. For more than 20 years it has appeared in the Michelin Guide, a recognition that speaks to its consistent quality and creative cooking. The restaurant describes itself as a trendy city restaurant with class and a lively buzz – a place where modern cuisine meets classic technique.
In 2015, chef Mark van Wijngen took over Huson, bringing his own vision while respecting the restaurant’s established reputation. The menu is built around his favorite dishes, combined with classics that have defined the kitchen over the past two decades. Michelin notes his daring, balanced cooking: a rosé-grilled lamb saddle and confit lamb neck, paired with green asparagus, lemon zest, polenta with smoked egg yolk, and an asparagus cream. Dry-aged ribeye, aged in Himalayan salt, is another signature preparation.
Huson offers several ways to dine. A three-course lunch menu changes daily and can be served within an hour. The Signature Menu presents five of the chef’s hallmark dishes, with an optional cheese course. For more flexibility, the à la carte signature dishes can be mixed and matched across courses. A current special features 160 grams of beef tenderloin with classic pepper sauce, thick fries, and salad – available until June 2026.
Huson extends its reach with a wine boutique and delicatessen, offering a carefully imported selection of wines and gourmet products, available in the restaurant and online. Chef Mark also crafts a limoncello that earned a silver medal at the International Wine & Spirit Competition in 2023. The restaurant can host private dining for groups up to 40, and exclusive buyouts are possible for lunch or dinner.
