The story
In the heart of The Hague, on Prinsestraat, Bøg presents a refined take on modern Dutch cuisine, rooted in Scandinavian sensibility and a deep respect for local producers. The restaurant opened in 2014, and since September 2023, chefs Thomas van Voorst and Luc Rensen — former classmates at culinary school in Breda — have been at the helm, steering the kitchen toward its own distinct identity. The name and the story now fit what has been on the plate for some time: a kitchen built around ingredients from farmers and growers they know by name.
The menu changes with the seasons, offering two set tasting options: one focused on meat and fish, the other on vegetables and dairy. Each course tells the story of the moment — dishes like langoustine with yogurt and fig leaf, red mullet with chicken and cabbage, or dairy cow with onion and anchovies sit alongside vegetable-led plates such as ricotta with yeast and celtuce, or turnip with crème crue and pea. A cheese course and Baeri caviar are available as seasonal supplements. The chefs invite guests for an evening of flavour and curation, where the ingredients speak for themselves.
The wine list is carefully selected from small European producers, all organic or biodynamic. The sommelier’s pairing offers five glasses — or half glasses — and a non-alcoholic option is also available. From Mosel to Corsica, Burgundy to Italy, the wines are chosen for honest grapes and surprising pairings.
Bøg has earned a place in the Michelin Guide, recognised for its thoughtful cooking and clear commitment to quality. It is also listed in Gault&Millau and the We're Smart Green Guide. The atmosphere is welcoming and precise — a place where the evening unfolds course by course, driven by the rhythm of the season.
