The Philosophy of Pure, Local Eating

Héron Petit Restaurant in Utrecht is built on a simple conviction: honest food, direct from the source. “Without intermediaries between us and the source,” they say. That means working closely with the farmer, the gardener, the fisherman, the cheesemaker. The menu is dictated by what’s available from Dutch soil and waters, season by season. But the kitchen doesn’t stop there. A significant part of their ingredients is preserved in-house—through pickling, fermenting, and other techniques—so you might find asparagus in winter and kale in summer, each ingredient brought back from a past season.

Foraging and the Wild Larder

Victor, the restaurant’s “geestesvader” (founding spirit), is deeply knowledgeable about foraging. Much of the menu is foraged from the wild around Utrecht, or from a nearby food forest. This is how they “scharrelen” (scratch together) their menus, much like the heron that inspires their name. Dishes highlight ingredients you might not have known were edible—wild wadoester, angelica root oil, Douglas fir, walstro, sea buckthorn, and more. The current menu (starting at €52 for three courses) includes plates like meiraap with wild wadoester and angelica root oil, or sheep rack with egusi and red cabbage, and a dessert of sorghum with hazelnut praline and red currant.

A Team of Curious Cooks

The kitchen is led by Victor and Joyce, with chef Josephien (Cas Spijkers Academie alum) and a team of dedicated cooks. The open kitchen puts guests in direct contact with the food and the people making it. The ethos is one of curiosity and collaboration—Aaron bakes his own sourdough, John stages at top restaurants in Lima and Florence, and Emma, a cultural anthropologist, connects people with food. Together, they embody a modern, sustainable Dutch kitchen that has earned a Michelin Bib Gourmand for its quality and value, alongside a Green Star for its environmental commitment.
