The story
In the historic centre of Hattem, the remains of the Voorburcht stand as the last vestige of Castle de Dikke Tinne, built around 1400. What was once the outer bailey housing the castle’s staff and supplies is now a restaurant that wears its history with quiet pride. The thick stone walls and atmospheric interiors make every meal feel like an occasion.
Chef Dennis leads the kitchen with a French-oriented approach, using local products and weaving in international influences. He is supported by his right hand, Sverre, and the rest of the kitchen team. The result is cooking that is grounded in technique but never fussy – straightforward, flavour-driven dishes that let the ingredients speak. The kitchen’s commitment to quality and value earned De Voorburcht a Michelin Bib Gourmand in 2026, a recognition that fits the restaurant’s ethos: good food, good wine, no pretence.
Wine plays a central role. Vinologist Gerlinde and sommelier Bas are on hand to guide guests through a thoughtful wine list, while the beer selection is equally broad. The restaurant is open for dinner Tuesday through Friday from 17:00, and on Saturdays from 12:30 for lunch. For those who prefer to eat at home, chef’s boxes of three to five courses are available for takeaway, requiring only a brief finishing touch. Larger parties of seven or more are served a chef’s menu. The team asks that dietary needs be communicated at the time of booking – a sign of the careful, personal attention that defines the place.
