Viktor personally harvests the Idre elk that features on the menu, while mushrooms are gathered by family members and reindeer meat comes from Mattias at the local sameby. This approach to Nordic cooking blends traditional mountain preservation with bright Asian accents like miso and gochujang, creating a menu built around small plates designed for sharing. Raw elk served with brown butter, black truffle, and pickled onion demonstrates how precise seasoning elevates wild game without masking its natural character. House-made ravioli arrives coated in skyr butter alongside crisp apple slices and toasted almonds, offering a quiet contrast between rich dairy and fresh acidity. Here, situated right in the town square at Idre Fjäll, the focus is squarely on the raw ingredients. Even from a first glance at the menu, we learn that Viktor shot the Idre elk, the mushrooms (including a couple of pine needles here and there) were picked by his grandmother, and Mattias from the Idre Sami community has contributed the reindeer meat. The appetizers are thus securely anchored in the local—yet they draw their flavor inspiration from Asia, with tastes like miso, kimchi, and gochujang, and from Italy/Spain, with a range of quality charcuterie and snacks. The elk tartare with brown butter, truffle, and pickled onion is a complete success, as is the ravioli with butter, apple, and almonds. The short but well-chosen wine list stays within Europe and on an A4 sheet—and everything is available by the glass. Local breweries from Orsholms Brygghus and Mora Bryggeri coexist with larger international brands, sour beers, and time-limited guest beers.
