The story
Fresh. Fermented. Wood-fired. These three words capture the essence of BELLIES, a plant-based restaurant in Stavanger that has earned a Michelin Recommended distinction. The kitchen works exclusively with ingredients from the plant kingdom, sourcing as much as possible from local farmers. The cooking style shifts with the seasons—lighter in summer, deeper and more preserving in winter—so the menu is never static.
The dinner offering is called Full Bellies: nine courses served from 17:30, 19:00, or 20:30. Guests are asked to set aside two and a half hours to enjoy the full arc of the meal. A wine pairing (980 NOK) or a non-alcoholic drink pairing (680 NOK) is available. On Saturdays, the restaurant opens for a longer lunch—six courses served at 12:30 or 14:00—with the same attention to detail and the same opportunity to explore the glass.
BELLIES is located at Støperigata 6, between Pedersgata and Ut i Naturen. The entrance is through the park, either from Pedersgata (just before number 130) or from Dokkgata. The atmosphere is relaxed, the focus squarely on what comes out of the kitchen.
The Michelin Recommended award reflects the precision and integrity of the cooking here. It is a quiet nod to a kitchen that lets plants speak for themselves—through fermentation, careful sourcing, and the heat of the wood-fired oven.
