The story
Speilsalen – the Mirror Hall – is the fine dining restaurant within Trondheim's Britannia Hotel. The name hints at the room's historic grandeur, yet the atmosphere is warm and welcoming. Guests can choose to sit at the Chef's Table, watching the kitchen at work, or at round tables that encourage conversation. A dedicated caviar bar adds an optional prelude to the meal.
Head Chef Håkon Solbakk crafts his menus around the finest handpicked Norwegian produce, prepared with precision and respect. The flagship tasting menu, Grand Symphony, showcases the full breadth of seasonal ingredients from land and sea. A shorter version, Petite Symphony, is available Wednesday and Thursday, offering a more compact journey through the same exceptional flavours. On Saturdays, a Champagne Lunch presents a five-course selection of menu highlights, paired with a glass of bubbles on arrival. Head Sommelier Armin Begic curates the wine pairings, drawing from one of Norway's finest wine cellars.
Only ten months after opening, Speilsalen earned its first Michelin star in February 2020 – a star it has retained every year since. In the 2024 Michelin Guide, the restaurant was again recognised for its consistently high quality. Chef Solbakk, speaking after the announcement, credited the entire team: "It takes a lot of hard work to maintain a consistently high level every evening throughout the year." The contemporary, modern cuisine at Speilsalen is a testament to that dedication.
