The kitchen is led by Executive Chef Meik Brammer, whose 27-year career has taken him from Switzerland and Egypt to Kuwait, Shanghai, and Thailand before he took the helm at Marriott Hotel Manila in 2010. His team works from an open kitchen, where the modern, elegant dining room allows guests to watch as the prime cuts hit the grill.
The menu centers on US Certified Angus Beef Prime, with cuts available from 250g to 350g. The standout 900g Prime Rib, served with five sides and two sauces, is a celebration of quality beef in the heart of Manila. For those seeking something deeper, the OMI Wagyu (A-5) Striploin Steak and the Tajima Tomahawk MB5 (1,500g) are substantial options.
