A Palace Kitchen Reimagined

Artesse by Juanlu Fernández occupies the former courtyard of the Lubomirski Palace in Kraków, now transformed into a glass-roofed orangery. The space fulfills a two-century-old dream of Princess Izabela Czartoryska, who once imagined a garden of exotic plants and culinary celebrations here. Today, palm fronds and ferns frame the dining room, where classical art from the palace collection meets contemporary works by world-class artists.

Reconstructive Cuisine

The kitchen is led by head chef Mateusz Suliga, who describes his approach as “reconstructive cuisine.” He reaches into centuries-old Polish and European fine dining recipes, reinterpreting them with modern techniques and the finest seasonal ingredients sourced from carefully selected suppliers. The result is a tasting menu that honours the past without being trapped by it — a multi-cultural tapestry that remains rooted in regional tradition.

In April 2025, two-Michelin-starred chef Juanlu Fernández (LÚ Cocina y Alma, Jerez) became patron of the restaurant, bringing his philosophy of “duende” — a soulful, passionate approach — to the collaboration. Together with Suliga, he aims to elevate the already distinctive concept.
