The story
Tomek Muza’s path to opening MOLÁM began in London, where he worked in a courier company and DJ’d on the side. A holiday in Thailand sparked a love for the country’s cuisine, leading him to a job at a pan-Asian restaurant. He soon moved to Smoking Goat in Soho, a London icon for Thai food. There, curry pastes were pounded from scratch, meats marinated in spices and cooked over live fire. Muza absorbed these techniques, supplementing his learning with frequent trips to Thailand. Nearly twenty years after leaving Poland, the opportunity to return and create his own restaurant arose. MOLÁM opened in Kraków in 2019.
At MOLÁM, the kitchen is built around open-fire cooking, which adds depth and intensity to every dish. The menu is inspired by all four regions of Thailand, offering a fresh take on modern Thai cuisine. Muza prioritizes local produce and ethically sourced meats, combining authentic Thai techniques with sustainable practices. He uses seasonal vegetables from the region, such as fava beans or young kohlrabi, keeping the food fresh and reducing the carbon footprint. The result is Thai food that stays true to its soul while reflecting the bounty of Polish farms.
The restaurant’s vintage canteen atmosphere is lively and immersive. Guests can sit at the open kitchen counter, watching the chefs work over the fire—a front-row seat to the action. Thai-inspired cocktails complement the bold flavors. The energy is reminiscent of Bangkok’s night-time canteens, but with a distinctly Kraków warmth. This commitment to quality and authenticity has earned MOLÁM a Michelin Bib Gourmand, awarded for good quality, good value cooking—a recognition it has held since 2023.
