The story
Muga, on ul. Krysiewicza in Poznań, is a restaurant that earned its Michelin star through quiet, exacting work in the kitchen. The award, for high quality cooking, reflects a kitchen that builds each dish from clear, confident flavours and fine ingredients.
The menu is a degustation – the Reserva menu – designed to last between two and three hours. It opens with lobster, carrot and orange, a bright, clean start. Then tuna with wasabi and white radish, followed by venison with juniper and chanterelle mushrooms. White beans appear with dark truffle, and beef with ponzu and ginger. There is bread and butter between courses.
The main courses show a similar precision: turbot served with Antonius Osetra caviar, sea urchin, physalis and verjuice. Then pigeon with fig, fermented garlic and foie gras. A pre-dessert leads into chocolate with the same caviar, banana, pecan and tonka bean, finished with a bonbonnière.
Wine pairings are offered in three tiers – Clásico, Loco and Único – plus a non-alcoholic pairing for 260 PLN. The cooking is modern, rooted in European technique but with Polish ingredients and touches. The atmosphere is calm, the service attentive. Muga is a restaurant that lets the food speak for itself.
