The story
Concept 13 brings an international cuisine framework to dining on the fifth floor of Warsaw’s DH Vitkac. The kitchen operates under four dedicated chefs who rotate responsibility across courses. Dariusz Barański, Kohei Yagi, Rabie Abed Alsalam and Bartosz Cieszento each oversee specific stations, keeping the menu deliberately short. This structure allows precise attention to ingredient quality within their international cooking style. The Gault & Millau guide recognized this focused method with a 13.5 rating for 2026.
Appetizers like beef tartare served with a raw yolk and shaved parmesan appear alongside grilled octopus dressed with a light tataki glaze. The fish soup combines shellfish with fresh coriander, while pasta dishes feature hand-cut tagliatelle tossed with zucchini or rich crab meat in a bisque base. Desserts lean toward textural contrast, such as a vanilla cream paired with crisp puff pastry and ripe strawberries. Each plate reflects a straightforward balance of temperature and seasoning, keeping the international cuisine grounded in familiar techniques.
Large windows frame the interior space, washing the minimalist layout in natural daylight throughout the day. Grey walls and black accents meet pale timber tables that soften the industrial feel. An open kitchen sits at the center, letting guests watch plating unfold without barriers. Glass doors lead to a rooftop terrace where Warsaw stretches out below during warmer months. The layout suits quiet business meetings or relaxed weekend dinners equally well.
