The story
Chef Mattia Stanchieri’s first Lisbon project, Vibe, sits in the Chiado district as a red marble hideaway that pairs fine dining with a genuinely fun atmosphere. Stanchieri, 34, spent nearly twenty years in kitchens across three continents—from three-Michelin-star Geranium in Copenhagen and Da Vittorio in Italy to Belcanto in Lisbon, and earlier running his own restaurant in the Bahamas. That global journey informs every dish.
Vibe’s defining concept: every three months, the set menu changes to explore a different world cuisine—Creole, Italian, Thai, and beyond. While the inspiration travels globally, the ingredients remain deeply rooted in Portugal. The restaurant offers 7-course, 9-course, and 12-course menus starting at €90 per person, each carefully paired with wines or cocktails.
The Italian menu, for example, reimagines classics with a modern twist. Pumpkin Gnocchi pairs with São Jorge cheese and pickled pumpkin; Risotto alla Milanese (Carnaroli rice, saffron) comes with veal Ossobuco or a seafood gremolada. Starters like Vitell Tonnè (Maronesa veal tartare, tonnata sauce) and Pane & Salame (sourdough, salame Milano, pickles butter) set the tone. Desserts include Torta Paesana with bread ice cream and chocolate zabaione, and a Campari sorbet creation called Hidden like Davide Campari.
The restaurant’s design—sleek, minimalist, with warm lighting and an outdoor terrace overlooking Lisbon’s rooftops—creates an intimate setting that suits everything from romantic dinners to special occasions. Vibe earned a place in the Michelin Guide as a Recommended restaurant in 2025 and continues to hold that distinction for 2026. The drinks program is equally intentional: a list of mostly Portuguese wines by the glass and bottle, plus original cocktails like the North Sea Martini (gin, aquavit, dill, seaweed) and non-alcoholic options such as the Aurora Gimlet.
