Colette in Bratislava serves modern French fine dining where precision meets seasonal produce. Chef Lukáš Zluky leads the kitchen behind the counter, composing dishes that honor classic techniques while embracing local ingredients.

A Kitchen of Precision and Seasonality

Chef Lukáš Zluky builds each course around the finest available produce, applying rigorous French technique to Slovak ingredients. His Carte Blanche menu refreshes every month, moving from spring asparagus and wild garlic to autumn game and truffles. The open kitchen places this seasonal choreography on display. Diners observe the reduction of sauces and the plating process from just a few meters away.

Seasonal Flavors and Tasting Journeys

Colette structures its French cuisine into three tasting pathways: Découverte, Signature, and Intégrale, ranging from three to seven courses. Recent plates showcase the balance of tradition and creativity, such as snails layered with foie gras, quince, and a Tokaji wine gel with hazelnuts. Duck arrives with mushrooms and a touch of kimchi, while catfish pairs with sabayon and a distinctive blood orange sauce. The evening concludes with Granny Smith apple sorbet scented with parsley and lemon balm and a sweet crisp for texture.

Wine Pairings and Seasonal Harmony

Sommelier Antoine "Corto" Guichard draws from his background in Dijon to select biodynamic wines from Burgundy and the Loire Valley. He complements these with rare bottles from small Slovak growers, designing pairings that run alongside the evolving menu. The cellar reflects a preference for natural and bio wines, chosen to lift every course to a higher level.

The dining room accommodates just 32 guests, a capacity maintained by founders Michaela Budáčová and Anthony Point to preserve closeness. Their background in travel and modeling informed a concept that merges Parisian elegance with the energy of a neo-bistro.
