The restaurant’s identity is rooted in the ancient tradition of the almadraba, a sustainable trap-net fishing method that has been practiced in southern Spain for centuries. The heart of the experience is the "Susurro de los Atunes" (Whisper of the Tuna) tasting menu, a multi-sensory journey priced at €150. The menu showcases the incredible versatility of the fish, from delicate akami and ortiga to a rich ventresca otoro with mango agua chile. Other standout courses include a brioche "Pekín" of parpatana and a contramormo with curry and edamame. The meal concludes with a surprising postre of parmesan, mojama, and quince. All tuna is wild, sustainably caught, and ultra-frozen to -60ºC for safety.
