The story
A'Barra opened on Calle del Pinar in May 2016 and earned a Michelin star within six months — a recognition it has held ever since. The restaurant is part of the Sula Restauración group, an alliance between Joselito and La Catedral de Navarra, and is led by head chef Sergio Manzano.
The name "A'Barra" comes from a Basque word for an ancient tool used to carry fern and grass, symbolising a connection to the land and the transport of ancestral wisdom. For the team, the tool's two parts represent the unity of kitchen and dining room in pursuit of perfection.
The kitchen champions a product-based cuisine inspired by nature, with a strong commitment to sustainability. Menus change with the seasons, sourcing vegetables from La Catedral de Navarra, along with fish, meat, rice dishes and in-house pastries. A'Barra describes its approach as "healthy and sustainable cooking, based on the product," combining traditional techniques with ongoing research and development.
Standout dishes include the Joselito Vintage Gran Reserva ham and the Joselito Wellington sirloin steak with lemon curd and bordelaise sauce. The restaurant also offers a vegan tasting menu, with dishes such as roasted leek tartlet, almond panna cotta, and seasonal vegetables prepared with creativity.
The interior is contemporary and refined, inspired by a Quercus (oak tree). Natural materials — wood, granite, quartz — are paired with earthy brown tones and works by renowned artists. The space is bright and versatile, with a large main dining room, four private areas, and an exclusive kitchen table where guests can watch the team at work.
A'Barra also manages LA'Barra, a more casual bar space, and hosts corporate and private events. The wine list is carefully selected, featuring both national and international labels, with pairings available for the tasting menus.
