The story
In the quiet Chamberí district, facing Santander park, Ayantar is the project of four hospitality professionals who set out to create a space where quality, product respect, and genuine service come first. Their cooking is rooted in tradition but updated with a light hand – what they call “un camino de retorno a la esencia, a la artesanía del gusto.”
The kitchen prioritises seasonal produce and market ingredients. Dishes are recognisable and comforting, from slow-cooked stews (“cuchareo”) to daily fish and meat suggestions. The team believes in letting the product speak, but also in knowing its story – the producers, the origin. This philosophy earned them a Michelin Recommended distinction, a nod to their consistent, heartfelt cooking.
Ayantar offers a tasting menu at €55, an aperitif of the house, starter, seasonal vegetable dish, fish of the day, meat, dessert, and bread – a journey through their proposal in one meal. The à la carte changes regularly to reflect the best of each season.
The space itself is welcoming: a dining room, a bar, and a terrace with an open kitchen. It’s a place to take time, to enjoy good food and wine in good company. As they say, “Nos gusta la gente a la que le gustan todas esas cosas.”
