The story
After more than forty years and three generations in the same building in Humanes, the Sandoval family’s restaurant has taken a decisive step forward. Coque now occupies a 1,100-square-metre space in the heart of Madrid, at Calle del Marqués de Riscal 11. The move is not just a change of address — it is a declaration of intent. Brothers Mario, Rafael and Diego have conceived every detail together, each bringing their own strengths to the project, under the watchful eye of designer Jean Porsche.
The result is a restaurant that, in Mario Sandoval’s words, “transmits our current strength.” The layout is designed for the guest’s enjoyment, leading through four distinct spaces: a cocktail bar, a wine cellar, the kitchen, and the dining room. Each room is a stage in a personalised, meticulously planned sensory journey. The restaurant’s two Michelin stars reflect the precision and ambition of this new chapter.
Mario Sandoval’s cooking is described as “evolved but with its feet on the ground.” The current menu, titled La Historia de Coque en cinco platos, is a milestone in the restaurant’s story — a creative revision of what Madrid cuisine is and what it can be. A vegan and vegetarian option is available, and the wine list is notably interesting. The restaurant also offers a private dining room and is wheelchair accessible.
Coque is open for dinner only, with air conditioning for comfort. Reservations are made via the “Mesa cinQuenta” experience. The brothers invite guests to taste the result of a kitchen that investigates, adapts, and perfects, always looking for the perfect bite.
