The story
El Señor Martín is a restaurant devoted to the sea. Its motto, "De Mar a Fuego" (From Sea to Fire), captures the essence of what happens here: the best fish and seafood from Spanish coasts, selected daily from artisanal inshore fishermen, and prepared with minimal intervention. The grill is the favourite expression, but not the only one—steam, coals, stews, and raw preparations also play a part.
The kitchen is led by chef Carlos Urrutikoetxea, who personally works with the fish at the open counter. For the most dedicated diners, there is a tasting menu of 12 courses, served to just one table per service. The experience begins at the bar with the chef, choosing the day's catch, then moves to the wine cellar for starters featuring salt-cured and aged seafood, and culminates with grilled fish and unexpected desserts like sea urchin with honey.
The restaurant occupies two floors on General Castaños, near the Plaza Villa de París. The street-level floor is the more social area, with tables and a long kitchen bar—over 15 metres of front-row seats where you can watch the action. The bar menu mirrors the main menu but adds daily specials and hidden cuts that never make it to the printed list. Downstairs, the atmosphere is calmer and more intimate, with a private dining room for exclusive events.
Every piece of fish is chosen after talking directly with fishers and market scouts. The team tracks the subtle differences in flavour and texture that come from each port—the turbot from Galicia, the red prawn from Denia, the red tuna from Cádiz. They respect biological cycles and only serve fish at adult size, ensuring sustainability. This commitment to quality has been recognised by the Michelin Guide (Recommended 2026), a Sol Repsol, and the Metrópoli Award for Best Traditional Restaurant in Madrid.
